Size matters
Aiming for the authentic size, Hai Tram buys only breast meat that can be obtained from large chickens and uses one whole piece.
Crispy texture
They use the batter sprinkled with tapioca powder and fry twice in oil at two different temperatures, high and low, to give it a surprisingly crispy texture.
Yangnyeom source
They add domestic honey with a strong sweetness to the authentic pepper based Yangnyeom sauce to make a sweet and spicy sauce that goes well with the fried chicken.
